Ingredients

  • 2 cups broccoli florets
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the chicken breast and pat it dry.
  3. Season the chicken with garlic powder, salt, and black pepper.
  4. Heat olive oil in a pan over medium heat.
  5. Sear the chicken for 4-5 minutes on each side until golden.
  6. Transfer chicken to a baking dish.
  7. Add broccoli florets around the chicken in the dish.
  8. Cover the dish with aluminum foil.
  9. Bake in the oven for 25 minutes.
  10. Meanwhile, cook rice according to package instructions.
  11. After 25 minutes, remove the foil and bake for an additional 10 minutes.
  12. Serve chicken and broccoli over a bed of rice.
