- 1 lb chicken breast
- 2 cups broccoli florets
- 1 cup rice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the chicken breast and pat it dry.
- Season the chicken with garlic powder, salt, and black pepper.
- Heat olive oil in a pan over medium heat.
- Sear the chicken for 4-5 minutes on each side until golden.
- Transfer chicken to a baking dish.
- Add broccoli florets around the chicken in the dish.
- Cover the dish with aluminum foil.
- Bake in the oven for 25 minutes.
- Meanwhile, cook rice according to package instructions.
- After 25 minutes, remove the foil and bake for an additional 10 minutes.
- Serve chicken and broccoli over a bed of rice.
Notes
- Make sure not to overcook the chicken.
- Broccoli can be substituted with other vegetables.
- You can add cheese on top before the last 10 minutes of baking.
