A comforting and hearty Tuscan soup inspired by Olive Garden.
Ingredients

- 1 lb Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups kale, chopped
- 2 medium potatoes, diced
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a large pot, brown the Italian sausage over medium heat.
- Add chopped onion and minced garlic. Cook until onion softens.
- Pour in the chicken broth and bring to a boil.
- Add diced potatoes and cook until tender, about 15 minutes.
- Stir in the chopped kale and cook for 5 more minutes.
- Reduce heat and mix in the heavy cream.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve hot and enjoy!

- Use fresh kale for best flavor.
- Feel free to substitute turkey sausage for a lighter option.
- Adjust spice level by adding more or less red pepper flakes.
