- 2 medium zucchinis, sliced
- 1 cup mushrooms, sliced
- 2 cups pasta of your choice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Boil water in a large pot. Add pasta and cook according to package instructions.
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add sliced mushrooms and cook for 3-4 minutes until soft.
- Add zucchini slices and cook for another 5 minutes.
- Drain the cooked pasta and add it to the pan with vegetables.
- Toss everything together. Season with salt and pepper.
- Serve hot, topped with Parmesan cheese if desired.
Notes
- Make sure not to overcook the zucchini to keep its texture.
- You can substitute any pasta you like.
