Ingredients

- 2 cups of yellow rice
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 can of corn, drained
- 1 can of black beans, drained and rinsed
- 2 cups of vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic. Sauté until soft.
- Add diced bell pepper and cook for another 3 minutes.
- Stir in the yellow rice and cook for 2 minutes.
- Add corn, black beans, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes or until rice is cooked.
- Fluff rice with a fork and season with salt and pepper.
- Serve warm and enjoy!
