Ingredients

  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can of corn, drained
  • 1 can of black beans, drained and rinsed
  • 2 cups of vegetable broth
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic. Sauté until soft.
  3. Add diced bell pepper and cook for another 3 minutes.
  4. Stir in the yellow rice and cook for 2 minutes.
  5. Add corn, black beans, vegetable broth, cumin, and paprika.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer for 20 minutes or until rice is cooked.
  8. Fluff rice with a fork and season with salt and pepper.
  9. Serve warm and enjoy!
