- 1 whole turkey (12–14 pounds)
- 1 cup unsalted butter, softened
- 2 cups chicken broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups bread crumbs
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (165°C).
- Prepare the turkey by removing the giblets and patting it dry.
- In a bowl, mix the softened butter, salt, pepper, thyme, and rosemary.
- Spread the butter mixture under the skin of the turkey.
- Stuff the turkey with the bread crumbs, onion, carrots, and celery.
- Place the turkey in a roasting pan and pour chicken broth around it.
- Cover the turkey with foil and roast for 2.5 to 3 hours.
- Remove the foil for the last 30 minutes to allow the skin to brown.
- Check that the internal temperature reaches 165°F (75°C).
- Let the turkey rest for 20 minutes before carving.
