- 1 pound ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup water
- 1 small onion, diced
- 1 bell pepper, diced
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the diced onion and bell pepper to the pot. Cook until they are soft, about 5 minutes.
- Stir in the taco seasoning and cook for another minute.
- Add the black beans, kidney beans, corn, diced tomatoes, beef broth, and water. Mix well.
- Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, and enjoy your taco soup!
Notes
- You can add more vegetables like zucchini or carrots for extra nutrition.
- Top with shredded cheese, sour cream, or avocado for added flavor.
