- 2 cups cooked, shredded chicken
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheese
- 8 flour tortillas
- 1 cup green enchilada sauce
- 1/2 cup diced onions
- 1 teaspoon garlic powder
- 1 teaspoon cumin
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, half of the cheese, diced onions, garlic powder, and cumin.
- Warm the tortillas in the microwave for 20 seconds to make them more pliable.
- Spoon the chicken mixture onto each tortilla and roll them up tightly.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Pour the green enchilada sauce over the top of the tortillas.
- Sprinkle the remaining cheese on top.
- Bake in the oven for 25-30 minutes, until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Use rotisserie chicken for a quicker option.
- Adjust the spice level by adding jalapeños or swapping out the green sauce.
- Make sure not to overfill the tortillas to avoid spilling.
