A simple white chicken chili recipe that’s perfect for beginners.

- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic. Cook until soft, about 5 minutes.
- Stir in shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
- Remove from heat and stir in sour cream until well combined.
- Serve hot, garnished with fresh cilantro.
Notes
- Make sure to shred the chicken finely for even distribution.
- Adjust the spice level by adding more or less green chilies.
- For a creamier texture, add more sour cream.
- Store leftovers in the fridge for up to 3 days.
