Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Cook until soft, about 5 minutes.
  3. Stir in shredded chicken, white beans, green chilies, chicken broth, cumin, oregano, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  5. Remove from heat and stir in sour cream until well combined.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • Make sure to shred the chicken finely for even distribution.
  • Adjust the spice level by adding more or less green chilies.
  • For a creamier texture, add more sour cream.
