- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- 1 cup frozen mixed vegetables
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked rice
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Stir in the diced tomatoes, beef broth, mixed vegetables, oregano, salt, and pepper.
- Bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
- Mix in the cooked rice and stir well.
- Cook for an additional 5 minutes. Serve hot.
