Ingredients

  • 2 cups of mixed vegetables (bell peppers, broccoli, carrots)
  • 1 pound of chicken breast, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add chicken slices, cook until browned and no longer pink.
  4. Add mixed vegetables, stir-fry for 5 minutes.
  5. Pour soy sauce over the mixture, stir well.
  6. Season with salt and pepper to taste.
  7. Serve hot over cooked rice.
