- 1 cup of cooked rice
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the chicken breast into bite-sized pieces.
- In a bowl, mix the chicken, olive oil, salt, pepper, and garlic powder.
- Spread the chicken mixture onto a baking sheet.
- Add the mixed vegetables to the baking sheet.
- Bake for 20-25 minutes or until the chicken is cooked through.
- Serve over cooked rice.
Notes
- Choose any vegetables you like.
- Use a meat thermometer to check if chicken is cooked to 165°F (75°C).
- Leftovers can be stored in the fridge for up to 3 days.
