- 1 pound of chicken breast
- 2 cups of broccoli florets
- 1 cup of rice
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the rice and place it in a pot with 2 cups of water.
- Bring the water to a boil, then reduce heat and cover. Cook for 15 minutes.
- While the rice cooks, season the chicken with olive oil, garlic powder, salt, and pepper.
- Place the chicken on a baking sheet and surround it with broccoli.
- Bake for 25 minutes or until the chicken is cooked through.
- Fluff the rice with a fork once cooked and serve it on plates.
- Add the chicken and broccoli on top of the rice.
Notes
- Ensure chicken is cooked to 165°F (75°C).
- You can use frozen broccoli if fresh is not available.
- Try adding lemon juice for extra flavor.
