Ingredients

  • 200g udon noodles
  • 4 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1 carrot, sliced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste

Instructions

  1. Boil a pot of water and cook the udon noodles according to package instructions.
  2. In a separate pot, heat sesame oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add sliced mushrooms and carrots, cooking until softened.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add bok choy, soy sauce, and salt to the pot.
  7. Simmer for 5 minutes.
  8. Drain the cooked noodles and add them to the soup.
  9. Garnish with chopped green onions before serving.

Notes

  • You can substitute any vegetables you have on hand.
  • Adjust the soy sauce to your taste.
  • For extra flavor, add a splash of lime juice.
