A simple and comforting vegetarian udon soup that warms you up with every bowl.
Ingredients

- 200g udon noodles
- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 carrot, sliced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- Boil a pot of water and cook the udon noodles according to package instructions.
- In a separate pot, heat sesame oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add sliced mushrooms and carrots, cooking until softened.
- Pour in the vegetable broth and bring to a boil.
- Add bok choy, soy sauce, and salt to the pot.
- Simmer for 5 minutes.
- Drain the cooked noodles and add them to the soup.
- Garnish with chopped green onions before serving.
Notes
- You can substitute any vegetables you have on hand.
- Adjust the soy sauce to your taste.
- For extra flavor, add a splash of lime juice.
