Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, sliced

  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 can chickpeas (15 oz), drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach, fresh

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Pour in vegetable broth and add diced tomatoes, chickpeas, thyme, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add fresh spinach and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
