Ingredients

  • 1 cup of chopped celery
  • 1 cup of chopped onion
  • 2 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes
  • 4 cups of vegetable broth
  • 1 cup of frozen mixed vegetables
  • 1 cup of cooked meatballs (store-bought or homemade)
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the chopped carrots, celery, and onion. Cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced tomatoes and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  6. Add the frozen mixed vegetables and cooked meatballs.
  7. Season with basil, oregano, salt, and pepper.
  8. Simmer for another 10 minutes until heated through.
  9. Serve hot and enjoy your soup!
