Ingredients

  • 4 large potatoes, diced
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat a large pot over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté for 5 minutes until soft.
  3. Add minced garlic and thyme. Cook for another minute.
  4. Add diced potatoes and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  6. Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
  7. Stir in coconut milk and season with salt and pepper.
  8. Heat through and serve warm.

  • For a thicker soup, blend more of the potato mixture.
