A creamy and delicious vegan potato soup that’s easy to make and perfect for beginners.
Ingredients

- 4 large potatoes, diced
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add chopped onion, carrots, and celery. Sauté for 5 minutes until soft.
- Add minced garlic and thyme. Cook for another minute.
- Add diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender in batches.
- Stir in coconut milk and season with salt and pepper.
- Heat through and serve warm.
Notes
- For a thicker soup, blend more of the potato mixture.
- Add extra vegetables like spinach or peas for more nutrition.
- Store leftovers in the fridge for up to 3 days.
