Ingredients

- 1 cup lentils
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute.
- Stir in lentils, diced tomatoes, broth, cumin, and thyme.
- Bring the mixture to a boil, then reduce heat and let it simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper to taste.
- Serve hot, enjoy your meal!
Notes
- Rinse lentils before cooking to remove any debris.
- You can add other vegetables like spinach or bell peppers.
- For a thicker soup, blend a portion of it before serving.
