  • 1 cup rice
  • 2 cups bell peppers, chopped
  • 1 onion, diced
  • 2 cups diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the onion and bell peppers. Cook until soft.
  4. Stir in the rice, diced tomatoes, garlic powder, Italian seasoning, salt, and black pepper.
  5. Transfer the mixture to a baking dish.
  6. Cover with aluminum foil and bake for 30 minutes.
  7. Remove the foil, top with cheese, and bake for another 10 minutes until cheese is melted.
  8. Let it cool for a few minutes before serving.

  • Use any color bell pepper you like.
