- 1 pound ground beef
- 1 cup rice
- 2 cups bell peppers, chopped
- 1 onion, diced
- 2 cups diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- Black pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat.
- Add the onion and bell peppers. Cook until soft.
- Stir in the rice, diced tomatoes, garlic powder, Italian seasoning, salt, and black pepper.
- Transfer the mixture to a baking dish.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, top with cheese, and bake for another 10 minutes until cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- Use any color bell pepper you like.
- For extra flavor, add some chili powder or cayenne pepper.
- Feel free to substitute ground beef with turkey or a meat alternative.
- Leftovers can be stored in the fridge for up to 3 days.
