- 4 medium beets, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 tablespoon vinegar

Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and cook until soft.
- Add diced carrots and beets. Stir for a few minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 30 minutes until beets are tender.
- Add vinegar, salt, and pepper. Stir well.
- Blend the soup until smooth using an immersion blender.
- Serve hot, garnished with fresh dill.
