  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, and Italian seasoning. Bring to a boil.
  5. Add tortellini and cook according to package instructions.
  6. Stir in spinach until wilted.
  7. Season with salt and pepper. Serve hot.
