- 1 package of tortellini (9 oz)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/4 cup grated parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Boil water in a large pot.
- Add tortellini to boiling water and cook according to package instructions, usually about 3-5 minutes.
- While the tortellini cooks, heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add cherry tomatoes to the skillet and cook for about 3 minutes until soft.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Drain tortellini and add to the skillet.
- Toss everything together and season with salt and pepper.
- Sprinkle with parmesan cheese before serving.
Notes
- Make sure to stir the tortellini occasionally while cooking.
- Adjust seasoning to your preference.
- You can add other vegetables like bell peppers or zucchini.
- Store leftovers in the fridge for up to 3 days.
