  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1/4 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil water in a large pot.
  2. Add tortellini to boiling water and cook according to package instructions, usually about 3-5 minutes.
  3. While the tortellini cooks, heat olive oil in a skillet over medium heat.
  4. Add minced garlic and sauté for 1 minute until fragrant.
  5. Add cherry tomatoes to the skillet and cook for about 3 minutes until soft.
  6. Add chopped spinach and cook until wilted, about 2 minutes.
  7. Drain tortellini and add to the skillet.
  8. Toss everything together and season with salt and pepper.
  9. Sprinkle with parmesan cheese before serving.
