- 8 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 2 cups fresh spinach
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Cook spaghetti according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes until pink.
- Add cherry tomatoes and spinach; cook until spinach wilts.
- Combine cooked spaghetti with the shrimp mixture.
- Season with salt and pepper to taste.
- Serve with grated Parmesan cheese on top.
Notes
- Make sure shrimp are cooked through but not rubbery.
- Use fresh spinach for better flavor.
- Adjust seasoning to your preference.
