Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and sauté until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute.
- Stir in diced tomatoes, vegetable broth, salt, pepper, and sugar.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
- Add fresh basil and blend the soup until smooth.
- Serve hot with your favorite bread.
