- 1 pound ground beef
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (28 ounces) crushed tomatoes
- 4 cups beef broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Fresh parsley for garnish
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
- Form small meatballs, about 1 inch in diameter.
- In a large pot, combine crushed tomatoes and beef broth. Bring to a boil.
- Add carrots, celery, basil, and oregano to the pot.
- Carefully drop meatballs into the boiling soup.
- Reduce heat and let it simmer for 30 minutes.
- Check that meatballs are cooked through.
- Serve hot, garnished with fresh parsley.
Notes
- Make sure meatballs are evenly sized for even cooking.
- You can use ground turkey for a lighter option.
- Feel free to add other vegetables like spinach or bell peppers.
