  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, and pepper.
  2. Form small meatballs, about 1 inch in diameter.
  3. In a large pot, combine crushed tomatoes and beef broth. Bring to a boil.
  4. Add carrots, celery, basil, and oregano to the pot.
  5. Carefully drop meatballs into the boiling soup.
  6. Reduce heat and let it simmer for 30 minutes.
  7. Check that meatballs are cooked through.
  8. Serve hot, garnished with fresh parsley.
