Ingredients

- 1 pound of chicken breast
- 2 cups of broccoli florets
- 1 cup of rice
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the rice and 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While the rice cooks, season the chicken breast with olive oil, garlic powder, salt, and pepper.
- Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
- Add the broccoli to the baking sheet for the last 10 minutes of cooking.
- Once everything is cooked, fluff the rice with a fork and serve with chicken and broccoli.
Notes
- Make sure the chicken is cooked to an internal temperature of 165°F (74°C).
- You can substitute chicken with tofu for a vegetarian option.
- Feel free to add other vegetables like carrots or bell peppers.
