- 200g prawns, peeled and deveined
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon red curry paste
- 400ml coconut milk
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1 red bell pepper, sliced
- 1 cup spinach
- Fresh basil leaves for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in the red curry paste, cook for 1 minute.
- Pour in the coconut milk, stir well.
- Add fish sauce and sugar, mix to combine.
- Add prawns and cook until they turn pink.
- Mix in bell pepper and spinach, cook until just tender.
- Serve hot, garnished with fresh basil.
