Ingredients

  • 400ml coconut milk

  • 1 red bell pepper, sliced
  • 1 cup spinach
  • Fresh basil leaves for garnish

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in the red curry paste, cook for 1 minute.
  4. Pour in the coconut milk, stir well.
  5. Add fish sauce and sugar, mix to combine.
  6. Add prawns and cook until they turn pink.
  7. Mix in bell pepper and spinach, cook until just tender.
  8. Serve hot, garnished with fresh basil.
