Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the minced garlic and cook for 1 minute.
  3. Add the mixed vegetables and cook for 3-4 minutes until tender.
  4. Push the vegetables to one side of the pan and pour the beaten eggs into the empty side.
  5. Scramble the eggs until fully cooked, then mix with the vegetables.
  6. Add the cooked rice to the pan and stir everything together.
  7. Pour the soy sauce over the rice and mix well.
  8. Add salt and pepper to taste.
  9. Finally, stir in the sliced green onions and cook for another 2 minutes.
