- 1 pound ground beef
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 cup shredded cheese
- 8 small flour tortillas
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add diced onions and bell peppers. Cook until they are soft.
- Stir in black beans, corn, and taco seasoning. Mix well.
- Cook for another 5 minutes, stirring occasionally.
- Remove from heat and let it cool slightly.
- Place a spoonful of the mixture on each tortilla and sprinkle with cheese.
- Roll up the tortillas tightly and secure with a toothpick if needed.
- Serve warm at your tailgate party.
Notes
- Use lean ground beef to reduce fat.
- Feel free to add other veggies like tomatoes or jalapeños.
