A hearty taco soup with ground beef that is easy to make and full of flavor.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups beef broth
- 1 packet taco seasoning
- Salt to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add chopped onion and cook until softened.
- Stir in the taco seasoning and cook for another minute.
- Add black beans, kidney beans, corn, diced tomatoes, and beef broth.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Taste and add salt if needed.
- Serve hot with optional toppings.
Notes
- Drain and rinse canned beans to reduce sodium.
- Use lean ground beef for a healthier option.
- Adjust seasoning to your taste.
- Make it vegetarian by omitting beef and adding more beans.
