Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes into chunks.
  3. Boil the sweet potatoes in water for 15-20 minutes until tender.
  4. Drain the sweet potatoes and mash them in a large bowl.
  5. Add brown sugar, milk, melted butter, eggs, vanilla, cinnamon, and nutmeg to the mashed sweet potatoes. Mix well.
  6. Pour the mixture into a greased baking dish.
  7. Top with mini marshmallows evenly.
  8. Bake in the oven for 25-30 minutes until the marshmallows are golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • Ensure sweet potatoes are fully cooked before mashing.
  • Adjust the sweetness by adding more or less brown sugar.
  • For a crunchier topping, add crushed nuts on top of the marshmallows.
