- 4 medium sweet potatoes
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes into chunks.
- Boil the sweet potatoes in water for 15-20 minutes until tender.
- Drain the sweet potatoes and mash them in a large bowl.
- Add brown sugar, milk, melted butter, eggs, vanilla, cinnamon, and nutmeg to the mashed sweet potatoes. Mix well.
- Pour the mixture into a greased baking dish.
- Top with mini marshmallows evenly.
- Bake in the oven for 25-30 minutes until the marshmallows are golden brown.
- Let it cool for a few minutes before serving.
Notes
- Ensure sweet potatoes are fully cooked before mashing.
- Adjust the sweetness by adding more or less brown sugar.
- For a crunchier topping, add crushed nuts on top of the marshmallows.
