- 2 pounds of chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 4 carrots, chopped
- 3 potatoes, chopped
- 1 onion, sliced
- 1 cup chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, salt, pepper, garlic powder, and paprika.
- Add chicken thighs to the bowl and coat them with the seasoning.
- Place the chicken in a roasting pan.
- Arrange the carrots, potatoes, and onion around the chicken.
- Pour chicken broth over the vegetables.
- Cover the pan with aluminum foil.
- Bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes until chicken is golden.
- Let it rest for 5 minutes before serving.
Notes
- Use bone-in chicken for more flavor.
- Feel free to add other vegetables like bell peppers or broccoli.
- Check the chicken is cooked to 165°F (75°C).
- Leftovers can be stored in the fridge for 3 days.
