- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup fresh berries (strawberries, blueberries, or raspberries)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a cupcake pan with cupcake liners.
- In a bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, mix together the flour, baking powder, and salt.
- Add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture.
- Gently fold in the fresh berries.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- Do not overmix the batter to keep the cupcakes light.
- Check your cupcakes a few minutes before the timer goes off to avoid overbaking.
- You can substitute berries with chocolate chips or nuts if desired.
- Let cupcakes cool completely before frosting.
