Ingredients

- 1 pound of ground beef
- 2 cups of chopped vegetables (bell peppers, zucchini, corn)
- 1 can of diced tomatoes (14.5 oz)
- 1 cup of cooked rice
- 1 cup of shredded cheese
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add ground beef and cook until browned, about 5-7 minutes.
- Stir in the chopped vegetables and cook for another 5 minutes.
- Add diced tomatoes, cooked rice, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer the mixture to a casserole dish and top with shredded cheese.
- Bake in the oven for 25-30 minutes until cheese is melted and bubbly.
- Remove from oven and let it cool for a few minutes before serving.
Notes
- Feel free to use any vegetables you have on hand.
- For extra flavor, add herbs like oregano or basil.
- Make it vegetarian by replacing beef with beans.
