Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes (15 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large skillet, cook the ground beef over medium heat until browned.
  4. Add the cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper to the skillet. Mix well.
  5. Stuff each pepper with the beef and rice mixture.
  6. Place the stuffed peppers in a baking dish.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and sprinkle cheese on top of each pepper.
  9. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted.
  10. Let cool for a few minutes before serving.

  • Use any color of bell peppers you like.
  • Feel free to substitute ground beef with turkey or a meat alternative.
  • Add some chopped vegetables to the filling for extra nutrition.
