  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes (15 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the chopped onion and minced garlic until soft.
  4. Add the ground meat and cook until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Fill each bell pepper with the meat mixture.
  7. Place the stuffed peppers in a baking dish. If using, sprinkle cheese on top.
  8. Bake for 25-30 minutes or until the peppers are tender.
  9. Let them cool for a few minutes before serving.
