- 4 corn tortillas
- 2 cups corn kernels
- 1/2 cup cotija cheese, crumbled
- 1/4 cup mayonnaise
- 1 lime, juiced
- 1/4 cup cilantro, chopped
- 1/2 teaspoon chili powder
- Salt to taste
Instructions
- Heat a skillet over medium heat.
- Add corn kernels and cook until slightly charred.
- In a bowl, mix mayonnaise, lime juice, chili powder, and salt.
- Add charred corn to the mayo mixture and stir well.
- Warm tortillas in a separate skillet for 30 seconds on each side.
- Fill each tortilla with corn mixture and top with cotija cheese and cilantro.
- Serve immediately.

- Use fresh corn for best flavor.
- Adjust lime juice and salt to your taste.
- For a spicy kick, add diced jalapeños.
