Ingredients

- 1 cup cooked rice
- 1 cup cooked chicken, shredded
- 1 cup corn, canned or frozen
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta cheese
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a bowl, combine the corn, diced tomatoes, cilantro, lime juice, olive oil, chili powder, salt, and pepper.
- Mix well until everything is combined.
- In another bowl, layer the cooked rice at the bottom.
- Add shredded chicken on top of the rice.
- Spoon the corn mixture over the chicken.
- Top with crumbled feta cheese.
- Serve immediately and enjoy!
Notes
- Use leftover chicken to save time.
- Adjust the spice level by adding more or less chili powder.
- Feel free to add avocado or jalapeños for extra flavor.
