A simple and delicious street chicken rice bowl recipe.


Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 2 chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rice and water. Bring to a boil, then reduce heat and cover. Cook for 15 minutes.
  3. While the rice cooks, season the chicken breasts with salt, pepper, and soy sauce.
  4. In a pan, heat sesame oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until fully cooked.
  5. Remove the chicken from the pan and let it rest. Slice it into strips.
  6. In the same pan, add mixed vegetables and sauté for 3-4 minutes until tender.
  7. Fluff the cooked rice with a fork and divide it into bowls.
  8. Top the rice with sliced chicken and sautéed vegetables.
  9. Garnish with chopped green onions before serving.

Notes

  • Use leftover chicken for a quicker option.
  • Adjust the vegetables according to your preference.
  • For extra flavor, add a dash of chili sauce.
