A simple and delicious street chicken rice bowl recipe.
Ingredients

- 1 cup jasmine rice
- 2 cups water
- 2 chicken breasts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice and water. Bring to a boil, then reduce heat and cover. Cook for 15 minutes.
- While the rice cooks, season the chicken breasts with salt, pepper, and soy sauce.
- In a pan, heat sesame oil over medium heat. Add the chicken and cook for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the pan and let it rest. Slice it into strips.
- In the same pan, add mixed vegetables and sauté for 3-4 minutes until tender.
- Fluff the cooked rice with a fork and divide it into bowls.
- Top the rice with sliced chicken and sautéed vegetables.
- Garnish with chopped green onions before serving.
Notes
- Use leftover chicken for a quicker option.
- Adjust the vegetables according to your preference.
- For extra flavor, add a dash of chili sauce.
