- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1 cup fresh strawberries, sliced for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, mix until well combined.
- Add eggs one at a time, mixing after each addition.
- Stir in the strawberry puree until fully mixed.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set.
- Let it cool completely, then refrigerate for at least 4 hours.
- Before serving, top with sliced strawberries.
Notes
- Make sure your cream cheese is at room temperature for easier mixing.
- Check the cheesecake for doneness by gently shaking the pan; the center should be slightly wobbly.
