Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and cook until soft, about 3-4 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add ground beef or turkey and cook until browned, breaking it apart with a spatula.
  5. Mix in black beans and enchilada sauce. Stir to combine.
  6. Place corn tortillas in the skillet, folding them in half over the filling.
  7. Sprinkle shredded cheese on top of the tortillas.
  8. Cover and cook for 5-7 minutes until cheese melts.
  9. Garnish with chopped cilantro before serving.
