- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Chopped cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and cook until soft, about 3-4 minutes.
- Stir in minced garlic and cook for 1 minute.
- Add ground beef or turkey and cook until browned, breaking it apart with a spatula.
- Mix in black beans and enchilada sauce. Stir to combine.
- Place corn tortillas in the skillet, folding them in half over the filling.
- Sprinkle shredded cheese on top of the tortillas.
- Cover and cook for 5-7 minutes until cheese melts.
- Garnish with chopped cilantro before serving.
Notes
- Use a non-stick skillet for easy cleanup.
- Adjust spice level by adding jalapeños or hot sauce.
- Feel free to substitute ground meat with a meat alternative for a vegetarian option.
