- 2 pounds chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 bell pepper, chopped
- 4 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon thyme
- 1 tablespoon parsley
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add chicken pieces, cook until browned.
- Stir in carrots, potatoes, and bell pepper.
- Pour in chicken broth, add salt, pepper, thyme, and parsley.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 30-40 minutes until chicken is cooked through.
- Serve hot and enjoy.
