Ingredients

- 1 cup dried split peas
- 4 cups water
- 1 cup diced ham
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse the split peas under cold water.
- In a large pot, combine the split peas and water. Bring to a boil.
- Add the diced ham, onion, carrots, celery, garlic, and thyme.
- Reduce heat and simmer for about 1 hour, stirring occasionally.
- Once the peas are tender, season with salt and pepper to taste.
- Serve hot, garnished with additional ham if desired.
Notes
- Make sure to rinse the split peas to remove any debris.
- Adjust the thickness by adding more water if needed.
- Leftovers can be stored in the fridge for up to 3 days.
