Description

A warm and hearty split pea soup that’s easy to make.


Ingredients

  • 1 cup split peas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the split peas under cold water.
  2. In a large pot, add the chopped onion, carrots, and celery. Sauté for 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the split peas and vegetable broth.
  5. Add the bay leaf, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 45 minutes.
  7. Remove the bay leaf before serving. Adjust seasoning if needed.

Notes

  • For a creamier soup, blend a portion of it after cooking.
  • Store leftovers in the fridge for up to 5 days.
