- Salt and pepper to taste
- 2 cups chopped mixed vegetables (like green beans, peas, or corn)
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Cook for 5 minutes until softened.
- Add minced garlic and cook for an additional minute.
- Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add mixed vegetables and cook for another 10 minutes.
- Season with salt and pepper to taste.
- Serve hot and garnish with fresh parsley if desired.
