Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 more minute.
  4. Pour in the vegetable broth and add the diced tomatoes.
  5. Add dried thyme, bay leaf, salt, and pepper. Stir well.
  6. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  7. Add chopped spinach and cook for another 5 minutes.
  8. Remove the bay leaf before serving.
  9. Serve hot and enjoy!
