- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups spinach, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 more minute.
- Pour in the vegetable broth and add the diced tomatoes.
- Add dried thyme, bay leaf, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- Add chopped spinach and cook for another 5 minutes.
- Remove the bay leaf before serving.
- Serve hot and enjoy!
