- 2 pounds beef chuck, cut into 1-inch pieces
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Brown the beef pieces for about 5 minutes.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, and garlic.
- In a bowl, mix beef broth, tomato paste, thyme, salt, and pepper.
- Pour the mixture over the ingredients in the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Serve hot and enjoy your meal.
