Instructions
- Place the chicken thighs in the slow cooker.
- Add the chicken broth over the chicken.
- Layer the diced vegetables on top.
- Add the chopped onion and minced garlic.
- Sprinkle salt, pepper, thyme, and paprika over everything.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Check the chicken for doneness. It should be tender and easily pulled apart.
- Serve hot with your favorite side dish.
