Description
A hearty cowboy cornbread casserole that is easy to make and full of flavor.

- 1 pound ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 box (8.5 oz) cornbread mix
- 1 egg
- 1/3 cup milk
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, brown the ground beef over medium heat.
- Drain excess fat from the beef.
- Add black beans, corn, diced tomatoes, and taco seasoning to the beef. Stir well and simmer for 5 minutes.
- In a separate bowl, mix cornbread mix, egg, and milk until smooth.
- In a greased baking dish, spread the beef mixture evenly on the bottom.
- Pour the cornbread mixture over the beef layer.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until the cornbread is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Ensure the ground beef is cooked thoroughly.
- Feel free to add your favorite vegetables.
- For a spicier dish, use hot taco seasoning.
