Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 box (8.5 oz) cornbread mix
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat.
  3. Drain excess fat from the beef.
  4. Add black beans, corn, diced tomatoes, and taco seasoning to the beef. Stir well and simmer for 5 minutes.
  5. In a separate bowl, mix cornbread mix, egg, and milk until smooth.
  6. In a greased baking dish, spread the beef mixture evenly on the bottom.
  7. Pour the cornbread mixture over the beef layer.
  8. Sprinkle shredded cheese on top.
  9. Bake for 25-30 minutes or until the cornbread is golden brown.
  10. Let it cool for a few minutes before serving.
