- 2 cups broccoli florets
- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and chop all the vegetables.
- In a large bowl, mix the vegetables with olive oil, salt, pepper, and garlic powder.
- Spread the vegetable mixture on a baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway through.
- Remove from oven and let cool for a few minutes before serving.
Notes
- Cut vegetables into similar sizes for even cooking.
- Feel free to use any vegetables you like.
- Check for doneness; they should be tender and slightly browned.
