Ingredients

- 2 cups cooked shrimp, chopped
- 1 cup crab meat, shredded
- 1 cup cheese, shredded
- 8 corn tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix shrimp, crab meat, half of the cheese, and green onions.
- Heat tortillas in a pan with olive oil until soft.
- Fill each tortilla with the seafood mixture and roll them up.
- Place rolled tortillas in a baking dish.
- Pour enchilada sauce over the top.
- Spread remaining cheese on top.
- Bake for 20 minutes until cheese is bubbly.
- Serve with sour cream on the side.
Notes
- Make sure to warm tortillas to avoid tearing.
- Feel free to add your favorite seafood.
- Adjust the amount of sauce based on your preference.
