Ingredients

  • 2 cups cooked shrimp, chopped
  • 1 cup crab meat, shredded
  • 1 cup cheese, shredded
  • 8 corn tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix shrimp, crab meat, half of the cheese, and green onions.
  3. Heat tortillas in a pan with olive oil until soft.
  4. Fill each tortilla with the seafood mixture and roll them up.
  5. Place rolled tortillas in a baking dish.
  6. Pour enchilada sauce over the top.
  7. Spread remaining cheese on top.
  8. Bake for 20 minutes until cheese is bubbly.
  9. Serve with sour cream on the side.
